FIELD: chemistry.

SUBSTANCE: two versions are described for producing dry forms of blue anthocyanins encapsulated in a polysaccharide matrix by the spray drying method. The method comprises extraction of anthocyanins from the plant material with an aqueous ethanol solution or 0.1 M aqueous solution of hydrochloric acid, filtration, evaporation. The resulting concentrate is mixed with the maltodextrin matrix and spray dried. Spray drying parameters: injection speed - 600 ml/h, air flow rate - 9 m³/min, injection temperature - 120°C, outlet temperature -70-80°C. A composition of dry forms of blue anthocyanins encapsulated in a polysaccharide matrix containing a anthocyanin concentrate and a polysaccharide matrix at the weight ratio of 1:9 to 1:185 is also described.

EFFECT: invention provides blue anthocyanin dyes encapsulated in the polysaccharide matrix, highly soluble in water with high stability over time.
