FIELD: chemistry.
SUBSTANCE: anthocyanins are extracted from plant material 0.1 M with aqueous solution of hydrochloric acid. The obtained extract is filtered, purified from ballast substances and evaporated. The anthocyanin extract is mixed with matrix such as maltodextrin or arabinogalactan, the resulting purified anthocyanin concentrate is added at a ratio of anthocyanate concentrate and matrix 1:9 to 1:99. The mixture is stirred until a homogeneous mass is obtained. Drying is carried out by dispersive drying with following parameters: injection speed- 600 ml/h; air consumption - 9 m3/min; injection temperature - 120°C; output temperature - 70-80°C. The composition for obtaining dry forms of anthocyanins includes anthocyanin concentrate and matrix taken a ratio of 1:9 to 1:99, with either maltodextrin or arabinogalactan as the matrix.
EFFECT: invention allowes to obtain dry forms of anthocyanins that are well soluble in water, well retained for three months and do not require any special storage conditions.
