FIELD: food industry; pharmaceuticals; cosmetology.
SUBSTANCE: invention relates to food, pharmaceutical and cosmetology industries, in particular to a method for producing dry water-soluble forms of anthocyanins. Method involves two-step extraction of anthocyanin-containing berry paste. First extraction involves removal of ballast substances by extraction for 8 hours with organic non-polar and low-polar solvents at ratio of raw material: extractant from 1:6 to 1:8. Obtained extract is filtered and the solvent is removed. Further, the second extraction is carried out with extraction of target anthocyanin components. Aqueous solution of 60–65 % of ethyl alcohol and 0.1–0.2 % of citric acid is used as extracting agent at ratio of raw material: extractant from 1:8 to 1:10. Extraction is carried out in extractor for 3–4 hours at temperature of 53–60 °C. Produced extract containing anthocyanin fraction is filtered, and vacuum is removed at 47 ± 2 °C to remove ethanol. Remaining aqueous anthocyanin fraction remaining after evaporation is directed to spray drying with parameters: injection temperature 125–130 °C, outlet temperature 60–65 °C.
EFFECT: invention enables to obtain a dry water-soluble form with an anthocyanin content of 25–33% and a shelf life of not less than 12 months.
