SUBSTANCE: Propionibacterium acidipropionici strain DSM 25845, Propionibacterium freudenreichii strain of the subspecies shermanii DSM 25846, Propionibacterium freudenreichii strain DSM 25847, Propionibacterium thoenii strain DSM 25848, and Propionibacterium thoenii strain DSM 25849 are proposed. These strains have inhibitory activity against yeasts and mould fungi. The versions of a bacterial composition having inhibitory activity against yeasts and mould fungi and containing a selected strain in combination with a bacterium of the Lactobacillus genus or another strain of the Propionibacterium genus. A protective culture and a dairy product containing said strains are also proposed.
EFFECT: obtaining a dairy product, applying separately or as part of a composition for controlling the growth of yeasts and mould fungi in the method of storing a dairy product.
