SUBSTANCE: method consists in bactericidal treatment of the juice-shaving mixture, the treatment being carried out before the beet shavings enter the diffusion apparatus, and the solution of benzoic acid with the mass fraction of 0.01%, taken in the amount of 10% to the weight of the shavings at the temperature of 70°C and the exposure time 30 s.
EFFECT: increasing the yield and quality of sugar, reducing the content of reducing substances and proteins in the diffusion juice, increasing the purity of the diffusion and purified juice.
