FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for canning cucumbers is suggested, including preparation of products to be canned, placing them in cans, pouring with pickle solution. Scalding of cucumbers placed in cans is performed for 5 minutes; preparation of pickle solution based on the following quantities per 1.5 liters of water: sugar – 12 g, salt – 5.5 g; its filling in a can with vegetables and ingredients based on the following quantities: dill – 10 g, black currant leaf – 7 g, cherry leaf – 7 g, bay leaf – 0.3 g, sweet pepper – 3 g, cloves – 2 g, garlic – 20 g, aspirin – 3 tablets with a dosage of 500 mg; tight fixation with a metal lid. At the same time, the contents of the can is cooled down in an inverted state for 12 hours.
EFFECT: method ensures the creation of a food product for remote regions with a shelf life of up to 3 years, without deteriorating the quality characteristics.
