FIELD: fat and oil industry.
SUBSTANCE: method for production of vegetable oil, which includes the crushing of seeds with the shell separation, crushing the core to produce a crutch, crumb wet-heat treatment and the oil extraction by pressing or extraction. Before crushing, the seeds are treated with a superheated steam at a pressure of 0.2 MPa for 40–60 seconds with their heating up to 70–75 °C and subsequent cooling by an air stream at simultaneous drying to humidity of 7.0–7.5 %.
EFFECT: invention makes it possible to obtain high-quality sunflower oil characterized by a high degree of hydration of the recovered phospholipids and storage stability.
