FIELD: food industry.
SUBSTANCE: invention relates to fat-and-oil industry. The method involves separation of sunflower seeds from foreign bodies, drying, hushing seeds to separate husks and obtain seed kernels, heat-and-water treatment and pressing the seed kernels to produce oil with its following refinement. Seeds grown according to environmentally safe technology without pesticides are used as raw material. Prior to separating seeds from foreign bodies seeds of top and first class with moisture content 8.0-15.0% are isolated and dried in two stages; at the first one - up to 7.5-8.0% moisture content under the temperature of 45-50°C, at the second stage - up to 6.5-7.0% moisture content by active air ventilation combined with cooling and storing, pressing seed kernels is carried out under the temperature of 70-75°C. The invention allows manufacturing of ecologically pure press oil, decreasing its acid and peroxide value, quantity of lipid oxidation products, increasing content of physiologically valuable tocopherols and phospholipids.
EFFECT: manufacturing of ecologically pure press oil, decreasing its acid and peroxide value, increasing content of physiologically valuable tocopherols and phospholipids.
