FIELD: biochemistry.
SUBSTANCE: method for fermenting the stems of plants of Poaceae family is proposed. To carry out the process, stems of plants of Poaceae family are obtained, wherein said stems have an average length of more than 100 mm and wherein said stems have an average initial moisture content between 25 % and 80 %. These stems are pressed between the rollers, said stems being immersed in an aqueous solution, where with said rollers, said stems are pressed to between 20 % and 90 % of their average diameter and wherein said aqueous solution contains one or more fermenting organisms selected from the group consisting of yeast, lactic acid bacteria, acetic acid bacteria and combinations thereof. Stems are removed from said aqueous solution, where at least a part of said one or more fermenting organisms is stored in said stems. Stems are fermented during the fermentation period to produce fermentation products in said stems.
EFFECT: invention provides for efficient fermentation of the stems of the plants of Poaceae family.
