FIELD: biotechnology.
SUBSTANCE: disclosed is a method for controlling infection when growing yeast. Saccharomycetes class yeast is grown during the fermentation period at initial pH in a fermentation broth containing a carbon source, a nitrogen source containing urea, and a mineral source, where nickel content in the fermentation broth is less than 1 mg/kg. Fermentation broth is in functional connection with heat exchanger. Urea is added to the fermentation broth so that the pH of said fermentation broth during the fermentation period does not exceed the initial pH by more than 2.0.
EFFECT: invention provides control of bacterial contamination without using sulphites, antibiotics, acid washes or peroxides in production of fuel ethanol and in growing yeast for SCP.
