FIELD: fodder production; meat processing.

SUBSTANCE: invention relates to poultry processing industry and feed production. Essence of invention lies in that waste of bird evisceration is preliminarily subjected to high-temperature treatment at temperature of 150–200 °C with simultaneous grinding for 60–120 s, and then sent to fermenter for enzymatic hydrolysis at 55 °C with constant stirring at speed of 20–25 rpm for 12–24 hours, where consortium of microorganisms is also being introduced Bacillus endophyticus 2102, Bacillus safensis sp., Bacillus pumilus SAFR032, Bacillus licheniformis, Streptomyces parvus sp. Resulting mass is pasteurized for 10–30 minutes at temperature of 75–95 °C and sent to refiner for cleaning and / or decanter, and then for degreasing to separator.

EFFECT: invention makes it possible to obtain enzymatic hydrolyzate with high protein content and low fat content, which can be used as high-protein fodder additive for farm animals and birds.
