Method for the production of bread includes dough kneading from compressed baker's yeast, common edible salt, drinking water, straight white wheat flour, its fermentation, cutting, proofing of dough pieces and their baking. During the doughing, drinking water, compressed baker's yeast, common edible salt, drinking water, straight white wheat flour are added, and nanostructured quercetin or dehydroquercetin in an amount of 1.5 % of the weight of straight white wheat flour in xanthan gum or chitosan is additionally added.
