FIELD: food industry.
SUBSTANCE: invention relates to food industry, to confectionery industry and can be used as cocoa-containing additives in desserts such as creams. An additive is proposed for dessert products containing cocoa powder, ground nut and sweetener. As a nut, Manchurian walnut pericarp is used in the amount of 3.33–3.69 kg/100 kg of the finished product, sugar is used as the sweetener, besides that, the additive also contains drinking water. Herewith content of the components is, kg/100 kg of the finished product: cocoa powder 3.33–3.69; crushed pericarp of the Manchurian walnut 3.33–3.69; granulated sugar 60.65–63.81; drinking water 29.11–32.58.
EFFECT: invention provides increasing biological value, expanding range of dessert products and reducing fat content in finished product.
