FIELD: food industry.
SUBSTANCE: invention relates to food industry, to confectionery industry and can be used for preparing desserts such as creams. Dessert contains a source of rice starch, drinking water, protein-containing components in the form of a milk and egg component, fat-containing components, such as cocoa powder and ground nut, granulated sugar, gelatin, citric acid, vanilla flavor. As a source of rice starch, rice grits is used. Egg protein is used as an egg component. As a nut, pericarp of Manchurian nut is used in the amount of 1.235–1.365 kg/100 kg of a finished product.
EFFECT: invention allows to increase the biological value, reduce the fat content in a finished product and expand the assortment of desserts.
