SUBSTANCE: invention relates to food industry. Method for proving the dough pieces in the proofing cabinet is that the dough pieces placed in the proofing cabinet are kept at 30–42 °C at a relative humidity of the medium in the proofing cabinet from 70 % to 80 % in the humid environment formed by the air conditioner. Air conditioning unit is located in a proofing cabinet and is equipped with a block of axial fans, an ultrasonic humidity generator with a vibration frequency of 1.7 MHz and a drop catcher. Drop catcher is designed to collect large fog drops and provide water drops at the outlet of the climatic unit in a fine-dispersed pair 0.5–0.99 mcm in size. Uniform distribution of heat and moisture is provided with the help of the axial fan unit of the air conditioner, creating a pressure in the area of the outlet opening is larger than in the region of the inlet opening, which facilitates the direction of air flow from the air conditioning unit into two layers, namely, the upper hot air flow and the lower wet air flow in the form of a fine-dispersed vapor directed horizontally.

EFFECT: invention allows to reduce power consumption, to accelerate the beginning of effective work, to increase the degree of automation and autonomy, to create and maintain a given humidity at any given temperature, to increase productivity.
