FIELD: food industry.
SUBSTANCE: invention relates to food industry. Canned fruits are heated for 100 s by cycling water vapor with a temperature of 105–110 °C to the cans. Duration of vapour delivery cycles and vapour maintenance is equal to 10 sec and 10 sec respectively. During the entire steam supply process, the outer surface of the cans is blown with air, heated to a temperature of 105–110 °C. Then cans is filled with hot water of a temperature of 98 °C for 2–3 minutes. Water is replaced with syrup of a temperature of 98 °C. Next, a preliminary rolling with covers and heating cans with the product in a stream of heated air with a temperature of 140 °C and a speed of 6.5–7.0 m/s for 15 minutes is carried out. Complete rolling is further carried out and heat treatment in a solution of calcium chloride with a temperature of 120 °C is continued for 5 min. Following cooling is carried out by irrigation with water with a variable temperature of 95–35 °C for 15 min.
EFFECT: reduced duration of heat treatment and improved quality of the finished product.
