FIELD: food industry.
SUBSTANCE: invention relates to equipment for the extrusion processing of food products and can be used for the production of protein textures from food raw materials of various origins. Extruder includes a housing, on the surface of which along it holes are made, where movable spring-loaded pins are installed protruding into the product movement zone, simulating internal cutting on the body and having the ability to enter the body to pass the auger coil and returning back due to the spring. Inside the case there is an auger with a decreasing screw pitch or gradually increasing internal diameter of the auger shaft, as well as the boot device and the head in the form of a nozzle for mounting the die at the end of the auger housing.
EFFECT: technical result consists in increasing the mixing efficiency, increasing the supply and facilitating cleaning of the housing.
