FIELD: process engineering.
SUBSTANCE: invention relates to food industry, namely, to extruders to be used for production of protein texturates from food vegetable raw material. Proposed extruder comprises housing, driven screw with blade and grading die. Screw taper part surface in extruder die zone is provided with vanes that feature parallelogram section and are arranged along circumference with gradually increasing height in each line. Note here that top surface of even vanes in each lone is flat while that of uneven lines has cutouts bent toward rotation side. Extruder die consists of two split tapered parts with heating coil arranged there between. Note also that threaded hole to accommodate and secure radially arranged blade is made along screw tapered section axis.
EFFECT: higher quality of protein texturates.
