FIELD: food industry.

SUBSTANCE: invention relates to the food industry, namely to a confectionery multi-layered pastille product. Multi-layered pastille product is proposed, representing at least four formative pastille layer with a layer of spread between them and the subsequent coating, for the preparation of pastille layers, spreading and coating use a mixture consisting of sugar, water, pectin, applesauce with a dry mass fraction of at least 15 %, a gelation content of at least 330 and an acidity of not more than 0.9 °T, obtained from canned applesauce, egg white egg powder, which, before adding to the mixture, is reduced with water, divided into two parts, the first part is whipped to a density of at least 0.25 kg/m3, the second part is whipped to a density of not more than 0.15 kg/m3, the first part is made at the beginning of whipping the mixture, the second – after whipping, and then the mixture is mixed, with the following ratio of initial components, wt.%: sugar 15–25; water 4–7; egg white dry 0.5–1.0; pectin 0.4–0.8; apple puree – the rest, and the finished product has a specific volume of 3.4–4.1 cm3/g, plastic strength of 0.3–0.9 kg, ultimate shear stress 0.08–0.1 kg, adhesive stress of 0.01–0.05 kg. Multilayer pastille product additionally contains flavoring agents, and/or flavoring agents, and/or coloring agents, as well as fruit mass with a dry matter content of at least 15 %, in an amount of not more than 25 % by weight. In this case, the finished product is sprinkled with powdered sugar. Invention is directed to the creation of a multilayer lozenges in a continuous stream, which allows to intensify the production process of a multilayer lozenges with high organoleptic properties, stable quality regardless of the harvest season of apples and an extended shelf life with a stable structure and good form-holding capacity, as well as the claimed ratio of components allows to get the finished product soft, delicate, homogeneous structure with developed fine porosity, while small, thin-walled pores are evenly distributed throughout the cut-off space of the product, which provides it with an airy texture.

EFFECT: product is characterized by high elastic-plastic properties, and due to the content of pectin, the claimed pastille product has sorption properties and contributes to the removal of toxins from the body.
