FIELD: food industry.
SUBSTANCE: method of preserving finished products and / or semi-finished products in a package of multilayer films with a barrier layer with the possibility of their further heating, including washing, cleaning, cutting, heat treatment and placement of finished products and / or semi-finished products in a package of multilayer films with a barrier layer, sealing and sterilization in an autoclave. In this case, sterilization is carried out in an autoclave made with shower system using air-steam mixture, and time for sterilization is calculated taking into account heating time of the products to sterilization temperature and cooling time of the products after sterilization.
EFFECT: invention provides increase in productivity of preservation process of finished products with improvement in their organoleptic properties.
