FIELD: food industry.

SUBSTANCE: invention relates to the dehydration, grinding and drying of the gluten product and can be used in starch, flour and other industries. Device for drying wheat gluten consists of a feeder, a grinder, a drying tube with primary and additional cyclones, a heater, a fan. Feeder consists of a conical-cylindrical two-way auger inserted into a perforated shell, the turns of which have slotted grooves, and the groove of one turn overlaps with the protrusion of the other. Shredder consists of a lid with a matrix, a nozzle for supplying dry gluten, nozzles for input and output hot air, a shaft, located vertically with a knife fixed on it, cranks, the axis of which is directed at an angle to the axis of rotation, abrasion discs mounted on the cranks, and a unit of cutting knives. Crank is set at an angle of 5–15° to shaft of the chopper and connected to the abrasion discs bearing assembly. Grinder, the fan and the drying tube with the main and additional cyclones are connected in series, and the discharge pipe of the additional cyclone is connected to the grinder. Method comprises mixing raw gluten with dried lump gluten. Content of raw gluten in the mixture is not less than 40 % and not more than 65 %. All operations are carried out in the device in continuous mode, at a coolant temperature up to 80 °C, while ensuring that the gluten mixture is heated to a temperature not exceeding 55 °C.

EFFECT: technical result is to obtain wheat gluten with preservation of native properties thereof.
