FIELD: baking and macaroni industry. SUBSTANCE: method involves using ripened grain with seed coat having undamaged hyaline layer; shelling grain on shelling machine prior to cleaning from contaminants. Construction of machine provides removal of fruit coat surface layer particles in an amount of up to 5% of initial grain weight without damaging hyaline layer of grain seed coat, with embryo being kept. Grain is germinated in liquid medium in vessels of grain germination module, with air being supplied to grain before initial stage of intensive reduction of glue content. Germinated grain is ground to produce finely dispersed grain mass having temperature not exceeding temperature of protein denaturation in grinder. Each blade of pressure plate mounted in grinder has cutting heads and body with pressure surfaces. Grain mass production equipment set has apparatus for cleaning grain from contaminants. Apparatus has multiple-cascade hydrodynamic separator. First and subsequent separator stages are formed as overflow vessels, with turbulent flow of washing liquid being generated in first stage. Laminar flow of washing liquid is generated in terminating stage, which may be joined to grain surface washing apparatus. Grain grinder has housing with charging chamber, feeding auger, grids and knives arranged between grids. Blade-type knives are fixed on drive auger shaft. Each blade-type knife has cutting heads faced to grids. Each head extends toward respective grid and is in contact with it and blade pressure body. Direction of increasing distance between grid and pressure surface of blade body coincides with direction of rotation of auger, when viewed from grain mass discharge side.
