FIELD: food industry.
SUBSTANCE: invention relates to the food industry, to its confectionery industry. Method for the production of whipped souffle type candies is proposed, including the preparation of a syrup, the introduction of reconstituted egg white into it, the mixing of the mixture, and the addition of citric acid to the resulting mass, while mixing, molding, maturation, and prepare an agar-dextrose syrup, then bring it into the reconstituted egg white, mix with applesauce and mashed blueberry, knead for 8 minutes, then add citric acid and cognac, mix gently the resulting mass until a homogeneous consistency is obtained, mold the finished mass by the method of filling using a continuous-action filler, send to proving, using the following ratio of the original prescription components, %: agar 1.15; syrup 82.88; reconstituted egg white 1.05; apple sauce 11.89; mashed blueberry 2.94; citric acid 0.08; cognac 0.006; water – the rest.
EFFECT: invention allows to produce whipped candies of functional purpose using syrup, low energy value, high nutritional value, having a pleasant taste, aroma, tender and soft texture, having a well-fixed structure.
