SUBSTANCE: invention relates to food industry, in particular to confectionary industry. Disclosed is a method for production of whipped sweets such as "Ptichye moloko", including preparation of syrup, introduction of reconstituted egg albumen into it, whipping the mixture and adding condensed milk into the produced beaten mass while stirring, molding, standing, cutting, glazing with chocolate glaze, cooling and packaging, wherein agarowal syrup is prepared, then added to the reconstituted egg albumen, then mixed with apple puree and blueberry puree, whipped during 8 minutes, then added is citric and pre-beaten butter dairy butter with condensed milk, the prepared mass is gently mixed until homogeneous consistence is obtained; the prepared beaten mass is molded by smearing, maintained till hardening, cut into candy bodies and glazed with the following ratio of initial recipe components, %: chocolate glaze 32.91; agar 0.66; molasses 47.37; egg white 0.54; apple puree 4.18; blueberry puree 1.04; butter 9.45; condensed milk 3.54; citric acid 0.04; water – balance.

EFFECT: invention allows to produce functional purpose souffle using molasses, apple puree and pure blueberry puree of reduced energy value, increased nutritive value, having a pleasant taste, aroma, tender and soft consistence, in which the beaten mass has a well-fixed structure.
