FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Production method of the drink from whey involves the collection of whey, its pasteurization, cooling, making enzyme preparation of Maksilakt LGi 5000 β-galactosidase, fermentation to the degree of lactose hydrolysis of at least 60 %, inactivation of the enzyme by heating the serum and cooling. Introduction of chopped fresh Jerusalem artichoke and/or chopped fresh ginger root to the whey, Sladin 200K combined sweetener, ground turmeric and natural orange or Bergamot flavouring. Resulting mixture is stirred, pasteurized at a temperature of 80 ± 2 °C for 10 min, cooled to 15 °C and sent for bottling.
EFFECT: drink has high organoleptic characteristics, high biological and nutritional value, as well as preventive properties.
