FIELD: food industry.
SUBSTANCE: invention relates to meat industry and is intended for physical and chemical treatment of meat raw materials. Method comprises decontaminating raw material of animal origin exposure to ultraviolet radiation after primary post-slug treatment with further cooling and refrigerating storage. Exposure to ultraviolet radiation is carried out with power density on the treated surfaces of 10 to 50 mW/cm2, radiation dose from 50 to 500 mJ/cm2 for 1–50 seconds. Cooling and storage in refrigerating chambers are carried out in conditions providing access to atmospheric air products. Ultraviolet radiation sources used are amalgam or pulsed xenon or LED lamps with reflecting focusing coatings providing power on the source surface of at least 30 mWt/cm2.
EFFECT: higher efficiency of meat raw material disinfection, long storage life of both raw material and products of its secondary processing.
