FIELD: food industry.
SUBSTANCE: method involves the application to the surface of meat of water-containing protective multi-component compound in liquid form followed by packing meat into film material, which is formed by preliminary addition to the liquid compound, the composition of which is similar to the compound, applied to the meat surface, of water-soluble film-forming substance which is polyvinyl alcohol (PVA) with the subsequent reduction of water in this composition compared to the liquid compound till cured film material is formed with structural clusters, based on PVA and components of liquid compound and obtained in the curing process.
EFFECT: method allows to significantly increase the term of storage of fresh cooled meat in comparison with the traditional and known methods used in the meat industry.
