FIELD: technological processes.

SUBSTANCE: invention relates to technology of complex processing of wild raw material with production of biologically active substances for use in food and pharmaceutical industry. Disclosed is a method of producing a product from cedar nut shell in form of an extract containing a carbon-mineral complex, in which successively steps of cedar nut shell grinding, extraction, cleaning and spray drying, wherein grinding is carried out to particle size of 0.5–0.7 mm, ground shell is poured with 5.0 % aqueous glycerol solution and extraction is carried out at temperature of 80 °C, pH=8.5 for 2 hours, then obtained extract is filtered on ultrafiltration unit using membranes with pore diameter 0.01 mcm at temperature 60 °C and pressure of 0.5 MPa and spray drying for 20 s at the following parameters: temperature 100 °C, rate of solution supply 8 ml/min, air flow rate 15 m3/h. Glycerine extraction is carried out at duty water curve of 1:5, or with duty water curve of 1:15, or with duty water curve of 1:25.

EFFECT: invention enables to obtain a product from cedar nuts shell in the form of an extract containing a carbon-mineral complex with weight ratio of carbohydrates – 95,7–96,2 %, degree of purification – 95 % and high biological value for use in production of functional food products and biologically active additives to food.
