FIELD: dairy industry.

SUBSTANCE: invention relates to dairy industry. Method for production of cheese or cheese product includes preparation of initial composition containing water, fat substance and concentrates of milk protein, its mixing and temperature treatment, then deaeration in vacuum, cooling to temperature T2 lower than temperature T1, preferably from 35 to 55 °C, cheese mass coagulation, texturing, if necessary crushing cheese mass, placing into mold/recess from mold, and method does not include stage of separation of milk whey, and ratio of weight of calcium to weight of total nitrogen (Ca/MAT) in concentrates of milk protein is more or equal to 1.20 % and less than or equal to 2.70 %. Also disclosed is a product obtained using said method, wherein weight ratio of total nitrogen to total weight of product is less than or equal to 21 %, weight ratio of dry substance to total weight of product is more or equal to 40 % and ratio of weight of calcium to weight of total nitrogen ranges from 1.20 % to less than or equal to 2.70 %.

EFFECT: invention enables to obtain a product with spreading and/or ductility properties during heat treatment, with low moisture content, homogeneous, without holes/holes and suitable for grating.
