FIELD: food industry.
SUBSTANCE: invention relates to the tea industry. Tea leaves of rosebay leaves are pre-wilted till moisture content is 55–70 %, is twisted and treated with vitamin B6 solution in amount of 75–140 mg of vitamin B6 per 1 kg of initial raw material. Perform two-step fermentation. First stage of fermentation is performed in darkness, under anaerobic conditions, under vacuum at pressure of 30–100 mm of mercury or in a medium saturated with nitrogen or carbon dioxide for 1–6 hours at temperature of 31–50 °C. Second fermentation stage is carried out in aerobic conditions at temperature of 24–35 °C until fruity notes formation in smell and product color change to characteristic dark green. Ready tea contains gamma-aminobutyric acid (GABA) in amount of 630–1100 mg per 100 g, vitamin B6 in amount of 25–45 mg per 100 g and alanine in amount of 445–770 mg per 100 g of the ready product.
EFFECT: invention provides a product with increased biological value.
