FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to tea beverages production method. Method for production of tea with high content of gamma-aminobutyric acid from willowherbs consists in the fact that raw material of willowherbs leaves is frozen at temperature from -45 °C to 0 °C or cooled to temperature below dew point, after which it is heated to temperature of 15–25 °C, with subsequent grinding until homogeneous plant mass is obtained, prepared mass is treated with aqueous solution of vitamin B6 in amount of 0.10–0.25 g of vitamin B6 per 1 kg of said plant mass and aqueous suspension of glutamic acid or glutamic acid solution in ratio of 6.4–10.6 g of glutamic acid or said salt per 1 kg of plant mass with subsequent fermentation of mass at 22–40 °C for 2–10 hours, followed by drying at temperature 30–55 °C for 6–12 hours to produce finished product.
EFFECT: invention allows to simplify tea production method with significant increase of GABA content in end product.
