FIELD: food industry; tea production.
SUBSTANCE: method for the production of tea consists in that raw materials of Camellia sinensis leaves is wilted at reduced pressure of 50-350 mm Hg, with addition or without addition of carbon dioxide, then, leaves are twisted, cut, fermented, and dried, wherein, in the middle of the wilting stage, when reaching leaf moisture content of 60-65% and/or before the fermentation stage, raw materials are treated with 2.5-10% solution of glutamic acid salt and 0.25-0.5% solution of vitamin B6 derivative, or raw materials are treated with 2.5-10% solution of glutamic acid salt with vitamin B6 derivative preliminary dissolved in it, while the fermentation process is carried out at a temperature from 35 to 45°C for 4-12 h with removal of gases released during fermentation and reduced pressure.
EFFECT: invention allows for simplification of a method for the production of tea with a significant increase in GABA content in a final product and obtainment of desired content of biologically active substances.
