FIELD: food industry.

SUBSTANCE: invention relates to dairy industry and may be used for production of melted cheese products. Method envisages raw material intake and grinding, composition of the mixture, melting, cooling, packing and storage. When preparing the mixture, one introduces into the mixture a maize stinker extract produced by way of extraction of maize stigmas in water at ratio of 4.5:136, at water temperature of 50–55 °C and duration of extraction is 3 hours, followed by extract filtering. And during melting, swollen blood plasma is added, obtained by applying dry blood plasma into water at temperature of 75 °C for swelling for 30 minutes. Initial components for preparation of processed cheese product are used in declared content.

EFFECT: invention allows to produce a processed cheese product with improved consistence, reduced fat content and increased food value.
