FIELD: food industry.
SUBSTANCE: invention relates to tea industry, in particular, to tea substitutes. Method is carried out as following. Material is held in perforated boxes in sealed chamber at temperature of 35–50 °C, wherein ozone-air mixture is blown through a layer of fermented material with thickness of 200 to 300 mm for 4 hours. Ozone generation and maintenance of its concentration is carried out in a repeated-short-term mode, when operating time of ozonizer is 5 minutes, and pause time is 20 minutes. During each subsequent cycle of switching on ozonizer, concentration of ozone is increased by 0.2 mg/m3 from 0.05 to 1.65 mg/m3. Ozone-air mixture passing through layer of fermented raw material is recycled. Recirculation direction varies every 2.5 minutes. To terminate fermentation and inactivate enzymes, the fermented raw material is blown ozone-air mixture with ozone concentration of more than 100 mg/m3 for 15 minutes.
EFFECT: invention ensures production of a single color product without multi-colored inclusions, enabling reduction of fermentation time.
