FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for the production of tea from the leaves of common aspen, including withering, grinding, fermentation and drying. Withering of the raw material is produced during the formation of a layer of 80–100 mm with forced air blowing with a temperature of 20–23 °C to a relative humidity of 55–60 %. Then the raw materials are crushed and fermented. Fermentation of the semi-finished product is carried out in lime boxes with a layer thickness of 15–25 mm and at a temperature of 30–35 °C for 12–15 hours before the appearance of the characteristic light sweetish-grassy aroma. Dry fermented semi-finished product at a temperature of 55–60 °C for 4–6 hours to a relative humidity of 8–10 %.
EFFECT: invention makes it possible to obtain a qualitatively new product with a pleasant light sweetish-grassy aroma, from which, when extracted with hot water, a tea drink is produced, which has a light brown color and a mild tea flavor, containing biologically active substances of a phenolic nature.
