FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to equipment for preparation of meat and portion semi-finished products for heat treatment. Device for tenderization of meat semi-products includes a housing with pins and is equipped with at least one needle and pulse voltage source, which includes an air discharger, a storage capacitor, a rectifying bridge, a regulator and a transformer. Pulse voltage source is placed inside the housing and connected to each needle and each pin through the bus. Studs are rigidly fixed on the bottom of the housing, which is rubber-coated on the outer side. Cover is movably fixed to housing outer side. Each needle is rigidly fixed on cover inner side. Each needle is configured to reduce the contact area, and each pin is configured for increased area of contact with the meat semi-finished product and so that when placing the meat semi-product in the housing and the closed cover each pin penetrates to depth of 5 mm, and each needle – on depth of 3–5 mm of meat semi-product. Pulse voltage source is configured to provide discharge with duration of 20–50 mcs, frequency 50 Hz and power 2–5 Wt/cm3.
EFFECT: reduced time of loosening process of intermuscular tissue and tendons of the structure of a meat semi-finished product with simultaneous preservation of the required quality of meat juice with nutrients: vitamins, mineral substances and other biological active substances due to application of electrohydraulic shock effect.
