FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used for production of red food coloring agent from berry antocian-containing raw material, in particular black currant berries. Method of producing anthocyan coloring agent from berry raw material includes milling of berries, their mixing with extractant based on water, extraction with stirring and separation of dye from solid fraction by filtration. Raw material is represented by black currant. Berries are milled, mixed with extractant at ratio of 1:20, wherein extracting agent used is 0.15 % aqueous solution of kappa-carrageenan. Extraction is performed at 65–70 °C for 30 minutes.
EFFECT: invention increases degree of extraction of anthocyan pigment and enables to obtain a nontoxic concentrated dye with stable properties.
