FIELD: food industry.
SUBSTANCE: invention relates to a method of producing inhibited starch with high stability during storage in a warehouse, comprising steps a) obtaining a slurry containing native granular starch, obtained from a starch-containing feedstock, b) adding at least one amino acid or a combination of two or more thereof and at least one oxidant to the suspension for inhibiting granular starch, c) adding at least one organic acid or bisulphite to the slurry to eliminate residual chemical reagents, off-flavours and undesirable odour and d) adding at least one antioxidant to the suspension for stabilizing the achieved starch inhibition during storage in the storage. invention also relates to inhibited starch obtained using said method, its use as an ingredient in a food product and to a food product containing said inhibited starch.
EFFECT: described is a method of producing inhibited starch with high stability during storage in a warehouse.
