FIELD: food industry.
SUBSTANCE: method for producing inhibited starch comprises providing a slurry containing granular starch obtained from a starch-containing raw material. This is followed by either alkalization of the suspension by adding ammonia or by adding one or more compounds having the ability to release or form ammonia in the suspension, adjusting the pH of the suspension to a value above 10.0, preferably up to 12.0 and adding at least one oxidizing agent to the suspension to react with said ammonia. Or the suspension is alkalized directly to a pH of 10.0 to 12.0 and chloramine or dichloramine is added to the suspension. Or alkalization of the suspension is carried out by adding ammonia or by adding one or more compounds having the ability to release or form ammonia in the suspension, adjusting the pH of the suspension to a value of from 7.0 to 10.0, and adding at least one oxidizing agent to the suspension to react with the said ammonia and adjusting the pH of the suspension to a value above 10.0, preferably up to 12.0.
EFFECT: production of inhibited starch stabilized for extended storage conditions.
