FIELD: food industry.
SUBSTANCE: group of inventions relates to the food industry, in particular to devices for fruits and vegetables peeling. Device includes a vessel having a valve-cover for loading and unloading the product, an agitator is equipped with a steam generator supplying steam into the vessel cavity under high pressure, and a steam condensation device. Vessel of the device can also have a cavity separated by a grid which is a steam generator. This steam generator is equipped with heating coil and filled with water. Water is converted into steam, overheated, its pressure is brought to design value, after completion of cycle steam is condensed. Device is also equipped with agitator, which movement is carried out due to steam pressure in vessel as it increases, or vibrator.
EFFECT: using the group of inventions will make it possible to increase quality of fruits and vegetables peeling.
