FIELD: food industry.
SUBSTANCE: invention relates to ovens with steam supply during cooking of products by heat treatment, for example bread. Oven for bakery product preparation includes a box-like housing, in which a working cavity is located, in which an article subjected to heat treatment is placed, and a measuring container containing a predetermined amount of water, wherein the water tray, into which water contained in the measuring container is poured, is located in the upper part of the housing, a heating element for heating the article to be subjected to heat treatment, steam generator for supply of water vapour into the working cavity, water branch pipe for water supply, which is filled into the water tray, to the steam generator and control unit for control of the heating element operation and a steam generator located in the housing, and the control unit starts the operation of the steam generator, when the heat treatment of the article subjected to heat treatment begins, for heating of the water sent to the steam generator, stops operation of the steam generator after all the water directed into the steam generator is evaporated and controls the operation of the heating element so that to enable heating of the product subjected to thermal treatment after the steam generator operation and to the end of heat treatment of the product subjected to heat treatment.
EFFECT: technical result of the invention is to ensure preparation of a tasty product by controlling the moisture content of the product without burning its outer surface.
