FIELD: food industry.
SUBSTANCE: invention relates to a bakery products manufacture method and a vacuum bakery oven for the method implementation. The bakery products manufacture method is characterised by the following treatment stages: a) baking product (4) is placed into the oven (3) bakery chamber under ambient pressure; b) then the oven (3) bakery chamber is vacuum-tightly closed and vacuumed; c) the oven (3) bakery chamber is indirectly heated; d) ) additionally, the oven (3) bakery chamber is directly filled with cold steam; e) additionally, the oven (3) bakery chamber is directly filled with hot steam; f) the oven (3) bakery chamber is again vacuumed and thus cooled; g) at the end, the oven (3) bakery chamber is ventilated.
EFFECT: invention allows to minimise weight decrease during the product cooling as well as reproduce the product in a consistent and quality way.
