FIELD: food industry.
SUBSTANCE: invention relates to application of yeast extract for wort and beverages clarification, such as wine, tea, beer or fruit juices. Disclosed is the use of a yeast extract comprising nucleic acids in an amount of at least 10 wt. %, preferably at least 15 wt. %, more preferably 20 to 95 wt. %, even more preferably 30 to 48 wt. % to the total weight of said extract, wherein said nucleic acids are formed by ribonucleic acid (RNA) fragments for wort and beverages clarification, specifically for flocculation and deposition of visible and/or invisible particles suspended in said wort and beverages, wherein each of said RNA extract fragments has average molecular weight from more than 10 kDa to 110 kDa. Also disclosed is use of yeast ribonucleic acid (RNA) fragments selected from a group comprising Saccharomyces, Kluyveromyces, Torula and Candida and mixtures thereof, for wort and beverages clarification, specifically for flocculation and deposition of visible and/or invisible particles suspended in said wort and beverages, wherein each of said RNA fragments has average molecular weight from more than 10 kDa to 110 kDa.
EFFECT: invention improves taste aspects, delay or limit formation of sediment and/or turbidity.
