FIELD: technological processes.
SUBSTANCE: device includes a unit for separation and washing of caviar from roe films, which includes a support frame, a container for separation and washing, a crank and connecting-rod assembly connected to a motor-reducer and an activator. Device also includes a salt concentrator unit, an ozonation and cooling unit of a salt solution, an ozone generation unit, a process measurement and control controller. Working part of activator contains from 2 to 8 sections. Each section is made in the form of a comb, the teeth of which are uniformly fixed in the upper part of the section and are located parallel to the activator axis.
EFFECT: invention ensures the caviar quality enhancement.
