FIELD: food industry.

SUBSTANCE: invention relates to confectionary industry and may be used for production of sweets with functional purpose jelly bodies. Disclosed is a method for production of jelly-shaped sweets, which envisages apple and citrus pectin swelling mixed with sugar in whole milk with temperature of 92±2 °C, taken in fivefold amount to apple-citrus pectin mass, stirring in a container with a mechanical mixer and a steam jacket at agitating speed of mixer of 1000–1500 rpm, adding remaining sugar, stirring with a stirrer speed of 22–30 rpm until complete dissolution of sugar, adding starch molasses, sodium citrate and boiling at temperature of 107 °C to dry substances content of 65 %, after which the mass is fed for molding into a funnel of candies molding machine equipped with a stirring device, and a concentrated aqueous extract of nettle leaves, a chamomile extract, cedar syrup with rosehips and red bilberries, ascorbic acid are added, then mass is molded at temperature 95–100 °C into starch molds, candies bodies are exposed at temperature of 8–10 °C, cleaned from starch, glazed with chocolate glaze and packaged.

EFFECT: invention allows to produce jelly sweets having high organoleptic indices and have high nutritive value and preventive properties.
