FIELD: food industry.

SUBSTANCE: invention relates to the food industry. Method for production of enriched bakery products includes preparation of dough based on wheat flour and soya ingredient, its fermentation, molding, proofing and baking. Enriching component for the dough preparation is represented by a protein-vitamin-mineral ingredient in amount of 20 % of the flour weight. Protein-vitamin-mineral ingredient is produced by way of soybean grain sprouting in moist filter paper in thermostat at temperature of 26 °C, relative air humidity of 85 %, for 24 hours, with subsequent inspection, washing, separation into cotyledons, convective drying at temperature of 50 °C for 270 minutes to moisture content of product of 9–10 %, its cooling and milling into flour to particles with size of 0.01–0.05 mm.

EFFECT: invention allows to obtain a product with a high content of protein, fat, vitamins B1, B2, B4, E, β-carotene, potassium, phosphorus, calcium and magnesium, and also broaden the range of products with functional properties.
