FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method for production of a wheat bakery product with an amaranth enricher includes preparation of dough containing bakery wheat flour, pressed bakery yeast, culinary food yeast, sugar sand, margarine, amaranth enriching agent and drinking water, handling, proofing and baking of the target product. Dough is prepared with thick salted pear. Amaranth enriching agent is represented by amaranth semi-skimmed flour produced during germination of semi-skimmed semi-skim milk in amount of 7.0 % to weight of wheat bakery flour into thick dense salt pod.
EFFECT: invention allows to improve quality, food and biological value of a bakery product.
