FIELD: food industry.
SUBSTANCE: group of inventions relates to production of bakery products, pastries, as well as to microbial origin agents for dough loosening. Microbic agents are specially selected strains used in composition of compositions, which contain hydrolysates of cereals, fermented with one or more strains of genus Kazachstania and/or Lachancea and, in particular, Kazachstania bulderi, Kazachstania exigua and/or Lachancea thermotolerans. Compositions are used in production of bakery and/or confectionary products.
EFFECT: obtained products have improved taste and aroma.
