SUBSTANCE: claimed invention relates to novel bread-baking improver, which contains acid pro-enzyme and regulator of acidity, and its application in process of preparation for baking of bread-baking dough, containing said improver.
EFFECT: application of improver allows to avoid shortcomings, connected with application in dough of acids and/or their acid salts, reduce rheological problems in dough.
