FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to methods for production of coffee substitutes. Method involves preparation of raw materials, its frying, water extraction, settling and evaporation. Roasting is performed at temperature of not more than 200 °C for 30 minutes, extraction with water is carried out at temperature of 80–95 °C for 30–40 minutes. Then settling and decantation from the solid residue. Evaporation of the solution is carried out at temperature not higher than 65 °C. Raw materials are represented by coarse whole maize flour.
EFFECT: this allows to produce a product with improved preventive properties, improved organoleptic indices.
